Eclatant: A Night to Remember
Every year, the Hotel & Tourism Management department hold a special event in the form of a Gala Dinner, featuring formal dining with full courses and proper service etiquette along with several performances as part of the entertainment. This year, the Gala Dinner entitled “Eclatant: A Night To Remember” was organized and prepared by the 2015 Batch of Hotel and Tourism Management students and took place at Atria Hotel Gading Serpong, Tangerang.
This Gala Dinner event is an annual final project for semester 5 students which covers 3 subjects, including Food and Beverage Production Practical, Food and Beverage Service Practical, and Pastry Production Practical. The main purpose of this event was to present a token of appreciation to parents and lecturers. The other purpose is to fulfill the final exam scores requirement in order to pass the semester and to provide students with necessary preparation for the next internship program.
The event started with an opening speech by Dr. Nila Krisnawati Hidayat, SE., MM., Dean of Faculty of Business and Communication, and continued with speeches by Ms. Diah Windrawati, Director of Sales and Marketing Atria Hotel, and Mr. Amry as representative from Hotel Front Liner Association. The event was attended by parents, lecturers, and also several important guests such as representatives from the Board of Directors of Swiss German University, representatives from sponsors such as Alam Sutera and JUKIR, representative from Hotel Front Liner Association, the Director of Sales & Marking of Atria Hotel, Head of the Cultural & Press Section of German Embassy, the Dean of Faculty of Business and Communication, and Head of Hotel and Tourism Management.
The students presented 3 courses for this special gala dinner; an appetizer, main course, and dessert. For the appetizer, they served Mushroom Soup Complemented with Crouton. Then, the server team presented Rare Roasted Fillet Mignon with French Bean and Wild Mushroom Sauce as main course, and Chocolate Volcano as dessert with a “food parade” service to respective tables. They also provided guests with apple juice as a welcome drink and also coffee and tea at the end of the night.
Serving Process
After dinner there was an introduction of the Gala Dinner commitee bridged with a short video. The General Manager of the event called the Commitees starting from the Production Manager, Service Team and Floor Manager, the Kitchen Team, and lastly the Board of Directors of the event who came to the stage and introduced the teams one by one. Then, in a surprise gesture, flowers were given to the parents in a display of appreciation. A closing speech was given by Mr Yap Hong Gie as the representative from the Board of Directors of Yayasan Swiss German University, and Ms. Munawaroh, MM, Head of the Hotel and Tourism Management department.
